Classic Garden Salad

I *admittedly* don't eat salads very often, but recently I have been craving this salad and making it for lunch and as a side at dinner quite a bit! It seems to go with everything and is super satisfying - just the right balance of sweet, salty, savoury, + crunchy! I don't often get a craving for a salad (is that even a thing?!) but when I do, this always is my go-to!


Making the perfectly balanced salad is really quite the art. This is why so many of us often find homemade salads unsatisfying and boring. Sometimes this is due to not having a good salad dressing (I will soon be posting my classic salad dressing recipe!), and other times its because what we throw into the salad doesn't really go together.


The staples of a good salad include:

- Mixed greens!!! One kind of green is boring for our palates.

- Sweet (think: apples, dried fruit, fresh berries, candied nuts)

- Satisfying (think: seeds, croutons, roasted chickpeas)

- Crunchy (usually satisfied by the sweet/satisfying factor)

- Veggies (think: green onion, beets, carrots, peppers, cucumbers, roasted squash)

- A bomb dressing


Admittedly, the dressing for this salad is far from *bomb*, but it is a simple classic and sometimes that is what ties in the ingredients of a salad best. This salad recipe lends itself to pretty much any salad dressing you prefer.

Recipe:

Yields 1 meal-sized salad or 2 servings side salad


Ingredients:

- 1/2 box mesclun (mixed) greens

(I love the Earthbound Farm Organic Bright Herb mix)

- 1/2 diced apple of your choice (I'm partial to Fujis)

- handful hemp hearts

- 1/3 cup sliced leek greens

- 1 large carrot, shredded

- balsamic glaze

- extra virgin olive oil


Steps:

1. Put the greens into bowl.

2. Layer on the apples, sliced leeks and shredded carrot.

3. Sprinkle the hemp hearts.

4. Give a good drizzle of the olive oil over the salad.

5. Generously drizzle the balsamic glaze over the bowl, adding more as needed.

6. Serve while it still looks pretty, or toss :)

7. Enjoy with someone you love.
