Quick. Easy. Throw-it-in-a-pot and cook for 30 minutes & you're done. That's the kind of meal you want after a long day at work and commuting in the constant rain that is Westcoast-autumn. Feel free to embellish this recipe by adding in additional vegetables such as chickpeas, cauliflower, mushrooms, etc.
Ingredients:
Yields approximately 8 servings
- 2 L veggie stock
- 1 large yam, cubed
- 1.5 cups lentils
- 1 broccoli crown, cut into 1" florets
- 1/2 cup cubed butternut squash, frozen or fresh
- 1 can coconut milk
- 5 refit lime leaves
- 1 bunch cilantro
- 3 tbsp red Thai curry paste
- 5 tbsp minced garlic + ginger paste
- 3 tbsp coconut oil
Steps:
1. In a large soup pot, heat coconut oil over medium heat.
2. Add in garlic + ginger paste (you can find this in the Asian section of most grocery stores) and curry paste (I used Massaman paste - you can find this in most Chinatowns/Asian speciality stores). Sauté until fragrant.
3. Add in lentils, cook for about 2 mins; stirring often.
4. Add in veggie stock & coconut milk. Bring to a boil.
5. Boil for about 15 mins with lid on, or until lentils are about halfway cooked through.
6. Bring down to a simmer and add in butternut squash & yam.
7. Finely chop cilantro stalks (approx. 1/4 cup), add in.
8. Add in lime leaves.
9. Add in broccoli florets.
10. Continue to simmer until lentils and veggies are al-dente. Approximately 10 mins.
11. Optional: garnish with chopped cilantro, toasted coconut flakes, coconut cream, or lime wedges. Enjoy! ♥
Notes:
You can find curry paste, garlic + ginger paste, + kefir lime leaves in any Chinatown or asian market. The kefir lime leaves freeze like a dream and stay fresh for up to 1 year, so the trip to find them is worth it!
